Buckwheat Gluten Free, cow-milk free Bread

I love buckwheat. It's aromatic and strong like coffee. Buckwheat is good for cardiovascular system, enables better blood sugar control, lower risk of diabetes, and help prevents gallstones, amongst others benefits.

Today's four mix is
10% potato starch
10% corn flour
10% arrowroot flour
20% buckwheat flour
20% tefff flour
20% oat flour
10% flaxseed flour

My bread machine takes 300g of flour mix.
Rest of the ingredients are
2 eggs
3/4 cup almond milk (plus some while mixing)
1 1/2 tsp apple cider vinegar
2 tbs honey
5 tbs extra virgin olive oil
1/2 tsp salt
1 tsp xanthan gum
1 tsp active dry yeast
1 tsp ground ginger
1/2 tsp ground garlic
a pinch of nutmeg
1 cup mix of sesame seeds, flaxseeds, walnuts, cranberry, wolf berry, raisins, sunflower seeds, melon seeds.

The bread is a bitter like coffee. It has a rich smell and taste. Not for the faint hearted. If you like strong coffee, then you'd like this.

If prefer milder taste, substitute teff flour with a sweet flour or mild flour such as oat. Many GF bakers use sorghum as it is a sweet flour. However, I don't use sorghum and millet flour as they have goitrogenic properties.

One thing about using buckwheat flour is that it soaks up more liquid. So when kneading/mixing, I have to add more milk to get the right texture.

I'm adding spices such as ginger, garlic and nutmeg as they have anti-inflammatory properties.
